Certainly this is the case. I never take jobs because I am desperate but many do, and aren't happy. You draw some very sound and interesting points here that go beyond the obvious and great to ponder on. Having said I never take jobs out of desperation, I have considered them and occasionally took them, bit never last and employers know that. Insecurity does have setting to do with it. When you do things out of inner security, you feel good, peaceful, happy, etc.
